Ingredients

– 500g hung yogurt

– 30g sugar

– 75g pomegranate seeds

– 60g tamarind chutney

– 100g mint chutney

– 30g nylon sev

– 150g assorted vegetable chips

– 120g flat puris

– 30g onion, thinly sliced

– 50g vinegar

– 7g salt

– 25g crisp chickpeas

– 5g fresh coriander

– 15-20 mint leaves

Method

1. Hang 1.5kg yogurt overnight to get 500g thick yogurt, then whisk with sugar until creamy and transfer to a piping bag.

2. Pickle onion in vinegar and salt for a few hours.

3. Pipe yogurt on a wooden board, arrange chips, puris, and chutneys.

4. Garnish with sev, pomegranate, mint, and coriander.

Ingredients

– 250g fresh paneer (cottage cheese)

– 4 tbsp caster sugar

– 1.5 tbsp ghee

– 4-5 tbsp milk

– 2 tbsp semolina

– 1/2 tsp cardamom powder

– Chopped cashews and raisins

– 1 tsp pistachio for garnish

For Caramelization

– 1 tbsp ghee

– 2-3 tbsp sugar

Method

1. Mash paneer, then mix with sugar, cardamom, semolina, milk, and ghee.

2. Caramelize sugar in a ghee-lined baking pan. Add paneer mixture and bake at 180°C for 40-45 mins.

3. Cool for 2 hours, then garnish with pistachios before serving.
