Bihari Baingan Chokha Recipe
Ingredients
- Two large brinjals
- One tomato
- 2 to 3 green chillies
- Mustard oil
- 4 to 5 garlic cloves
- 1 large onion, finely chopped
- ½ teaspoon chaat masala
- ½ teaspoon black salt
- Salt to taste
- Lemon juice to taste
- ½ cup coriander leaves, finely chopped
Recipe
First, wash and dry the brinjals, then apply mustard oil generously. Pierce them with a fork to create small holes. Place the brinjals on the gas flame to roast.
Once the brinjals start to cook, add the tomato, garlic, and green chillies to the flame, roasting them alongside the brinjals. In a few minutes, everything will be well-cooked. Remove from heat and set aside in a large bowl to cool for 10 minutes.
When it cools down, peel the brinjals, tomato, and garlic, and mash them thoroughly by hand to create a chokha (mash). Add the finely chopped onion, chaat masala, black salt, salt to taste, lemon juice, and coriander leaves and mix well. And in the end, add 4-5 teaspoons of mustard oil and give it a final mix.
